Burrito Bowls are very simple ,quick and easy meal to make, when it comes to burrito bowls you can make any way you like it. This is one of the many way we enjoy it.
- 1 cup if rice
- 3 chicken breast
- 1 Tomato
- 1 can of corn
- 1/2 purple onion
- 2 cups of Spinach or Green mix
- 2 Tbls of sour cream
- 2 Tbls of Cheese
- 3 Tbls of Salsa
I always start by cooking the rice for 1 cup of rice you add 2 cups of water, let the rice cook on low heat or in rice cooker. Continue by chopping the tomato, and onion into small squares. Open the can of corn and in a roasting pan begin to roast your corn, this gives the corn a deeper flavor. Rinse your green under cold water and place them on the side allowing them to dry. Season your chicken with some salt and pepper to your liking and cook on medium heat for 6 to 7 minutes on each side, once done let them cool and cut into squares. In a bowl start assembling your burrito bowls adding the ingredients including your cheese, salsa and sour cream. If you are Vegetarian you can discard the chicken, Sour cream and cheese this can be great that way as well . When I can’t think of anything to make for lunch or dinner this is always my go to. This weekend we had an mazing gathering to celebrate Mother’s Day. In Mexican culture we celebrate Mother’s Day on the 10th of May. This year we decided to do something different we decided not only to honor the women, but to embrace our culture and the history of it. We all dressed up in different native dresses from each State of Mexico, I can honestly say that I obsoletely loved it so much. All the decoration and plates where from made in Mexico.
It was so nice to experience this mazing moment with strong and amazing women. I really hope you all enjoy a little view into the party. Lets all embrace our culture and our history, theres is nothing more beautiful then that. Thank you so much..
Has a kid this was one of my favorite cakes, my grandmother use to make this for me all the time. This cake is very special to me, it brings great memories from my childhood. Not only is very simple and easy to make, but you don’t even have to bake it. Lets get started with this recipe.
- 4 Packs of Maria cookies ( you can this at your local Mexican store)
- 3 can of condense milk
- The juice of 2 Limes
- 1 cake mold
In a mixing bowl you want to mix your Lime juice with you condense milk, mix well to combine both ingredients. Grab your cake mold and start to build a even layer of the cookies, Poor an even layer of the condensed milk and lime mixture on top of your cookie layer. You want to repeat the process over and over until you are about 1 inch from the top. Once your cake is complete you want to refrigerate for about 2 to 3 hours, refrigerating the cake will solidify all the ingredients together keep it all in one shape. You can also choose to put it in the freezer to accelerate the process, you can serve your cake with a side of fruit and a glass of milk. You can make Udon Noodles in many ways, you can even make into a soup. This recipe definitely my favorite way to eat Udon noodles, all of my veggies and the udon noodles I bought them in Safeway. The Korean BBQ sauce I did have to go to a spacial store to purchase it, lets get started my friends.(Recipe for 4 people)
- 2 tubs of Korean BBQ sauce
- 2 cups of broccoli
- 2 carrots
- 6 pieces of bok choy
- 4 chicken breast
- 2 cans of water chestnuts
- 2 bags of udon noodles
- 3 Tbls of Olive oil

You want to start by cleaning all your veggies and chopping them to your desired size and cut up your chicken into small bite pieces. Heat up your pan on Medium heat with the olive oil. Once the oil has warmed up you want to start by adding the vegetables and letting them cook for about 7 minutes. While your vegetables are cooking want to grab a sauce pan and add water to it letting it come to a boil, once your water as come to a boil put in the noodles and let them cook for about 14 to 15 minutes. While your noodles are boiling you want to add your chicken to your vegetables, let them all cook for about 12 min. By this time your noodles should be ready, rinse out the water and add them to your veggies and chicken.Add your sauce (add sauce to your liking) and your water chestnuts, continuously stirring to distribute sauce letting all the ingredients cook for 2 to 4 min and you are ready to plate.

Lamb is one of my Husbands favorite meats, although I don’t make it often but when I do its always a hit. I wanted to show you one of his favorite Lamb recipes, lets get started. (this recipe is for 2 people, you can double the recipe if you are serving more)
- 1 Lb Lamb Ribs
- 1 Tbls of Rosemary
- 1 Tbls of Thyme
- 1 tsp of Oregano
- 1 Garlic clove
- 3 Tbls of Olive Oil
- 1 tsp of Lemon Juice
Lets start by preheating our oven to 370°F,once you have done grab a mixing bowl and add your rosemary, thyme, oregano, Olive oil, garlic cloves, and lemon juice mixing them altogether. Once mixed grab a sip lock bag and put your lamb ribs inside with your mixture, massaging the mixture to get even distribution. Let your lamb ribs marinade for about 15 minutes, once you have let them marinate for 15 minutes place your ribs on an oven safe glass container. Let your ribs cook for about 15 to 20 minutes, when your ribs are done let them rest for 15 min doing this will allow all the juices to come out. I paired the ribs with asparagus and rice, this is always a success when it comes to my husband. I have to say that even though I was not a big fan of Lamb, I have grown to enjoyed quite a bit. Salmon is one of my favorite dishes to make, I really enjoy a good piece of Salmon.I can have salmon in sandwiches, in a bagel, any way that I can eat Salmon I will eat it. Lets just say that I have great close relationship with Salmon. I would to share with you one of the many ways I enjoy eating steamed Salmon, lets get started with this recipe.( this recipe was for 6 People)
- 2 Tbls of Honey
- 1 the juice of one whole Lemon
- 1 tsp of salt
- 1 tsp of ground black pepper
- 2 Cloves of Garlic
- 1/2 tsp of ground red chili ( or more if you like a little punch of heat)
- 4 pounds of Salmon (you can also reduce the amount depending on the amount of people)
- 1 Tbls of butter
Place your butter in a sauce pan on medium heat, when your butter is warm add your garlic let it cook till the edges are golden brown. Add you lemon, honey, salt, black pepper, and red pepper let it simmer for about 3 min on low heat. While your sauce is simmering place the salmon in an oven safe glass container and line it first with aluminum foil and place the salmon on top. Add the sauce evenly on top of the salmon, close the salmon with an other piece of aluminum foil creating a type of pocket. Place the Salmon in the oven for about 20 to 25 min. If you like a crispy top you can uncover the Salmon and move you oven to the broil setting and let crisp for about 2 min. I usually eat this salmon with rice and my favorite vegetable and I am good to go. I hope you all enjoy this recipe thank you for stoping by and for all the support.
